Celebrate Spring with these Refreshing Cocktails

It's finally time to start packing away the winter sweaters and busting out the sandals and sundresses because spring is here! Defrost your winter blues and celebrate spring at your next event with these colorful and refreshing cocktails. Cheers to spring!

Mojitos are go-to drinks when the weather starts getting warmer and go so well with fresh fruit. In this recipe, the grapefruit adds an extra tartness and pink hue to make it perfect for celebrating spring. Your guests are sure to love this cocktail perfect for a happy hour out on the patio! 
GrapefruitMojito

Grapefruit Mojito
Serves 2
Ingredients
3 tbsp. sugar
3 tbsp. water
20 sprigs fresh mint
4 tbsp. lime juice
ice, as needed
2 ounces white rum
2 ounces fresh grapefruit juice
4 ounces sparkling water
slices of grapefruit for garnish
extra sprig mint leaves for garnish

 

 
Instructions

  • Add sugar and water to a small saucepan. Bring to a simmer and cook until sugar dissolves, 1-2 minutes, Set aside and cool.

  • Add fresh mint and lime juice to each glass muddle to bring out the flavor of the mint.

  • Top each glass with ice.

  • Pour in rum and grapefruit juice. Stir.

  • Top off each glass with sparkling water and garnish with slices of grapefruit and mint for garnish, if desired.

This Blueberry Gin Sour is the perfect balance of sweet and tart making it a great after dinner treat. Your guests will love the smooth and refreshing combination of these ingredients, sure to help them feel like their night is just getting started!

Blueberry Gin Sour 
Serves 2
Ingredients
1 cup of fresh or frozen and defrosted blueberries
2 tbsp. simple syrup or 1 tbsp. sugar
4 tbsp. fresh lemon juice
2 tbsp. egg white
1/3 cup and 1 tbsp. gin
2 dashes Angostura Bitters
lemon peel to serve

Instructions

  • Put the blueberries, lemon juice, simple syrup (or sugar) in a glass and muddle.

  • Add the muddled blueberries into a cocktail shaker.

  • Add the gin, bitters and egg white and shake to foam up the egg white.

  • Add plenty of ice into your shaker and shake for 30 seconds.

  • Strain the cocktail into two rocks glasses filled with ice. Garnish with a lemon peel.

Coordinating a relaxing welcome brunch? This lavender lemonade is fragrant, refreshing, and beautiful! It can easily be made as a non-alcoholic drink by just eliminating the splash of vodka. The perfect laid back cocktail to summon the springtime feels.

Lavender Lemonade

Serves 4
Ingredients
6 cups water divided
1/2 cup sugar
1/4 cup honey
3 tbsp. dried lavender
2 cups lemon juice
splash of vodka
lemon slices for garnish
purple food coloring (optional)

Instructions

  • Over medium heat, combine two cups of water and sugar, bringing to a boil until sugar is dissolved. Turn off of the heat and stir in honey and lavender.
  • Allow mixture to steep for 2 hours (less if you want less of a lavender taste). Strain the liquid, pressing the lavender down to get all of the juices into your mixture.

  • In a large pitcher, combine freshly squeezed lemon juice, lavender mixture, and water.

  • Add a few drops of purple food coloring if you'd like more color than the lavender provides. Serve over ice, top with a splash of vodka, and enjoy!
